How To Make This 2 Ingredient Coke Cake

Here’s how you make it. Simply pour a box of your favorite cake mix into a bowl, I’m using chocolate, and then pour in one 12 ounce can of Coca Cola. Stir the two ingredients together.

I decided to halve the batter and pour it into two 9″ greased and floured cake pans. You really don’t even have to go to that much trouble. This cake is very moist and might make a better sheet cake. So save yourself the trouble of dividing the mix and flouring the pans. (I recently bought and love these 9″ round pans! They are heavier than the ones I’m using in this post, and I just really like how solid they are.)

Grease a 9″ x 13″ pan and make a sheet cake. Bake your cake according to the instructions on the box.

Peppermint Buttercream Icing

I’m terrible at icing cakes, so my husband did this one.  He made a buttercream icing and added 1/2 teaspoon of vanilla and 1/2 teaspoon of peppermint extract.  That combination gave the icing a perfect peppermint flavor without overpowering the flavor of the cake.  I was so impressed.  Then he crushed some candy canes and sprinkled them over the top of the cake.  Can’t you see making this precious cake for your holiday party?  It’s so simple and perfect for the season!

Helpful Tips

I told you it was moist!  This cake is not easy to cut and keep in one piece, so again, I say, forego the layered cake idea and make a simple sheet cake.  Easy as…well, not pie…but it’s as easy as a 2 ingredient cake…and that’s super easy!

If you want to dress it up even more, try serving it slightly chilled or with a small scoop of ice cream on the side. The peppermint really pops when the cake cools, and it keeps its soft texture even after a night in the fridge.

This cake stays very moist, so a sheet cake works better than layered cakes. It slices more cleanly after it cools completely. You can switch up the flavor by pairing different sodas with different cake mixes. Chocolate mixes work well with Coca Cola, Diet Coke, Coke Zero or Cherry Coke. White and yellow cake mixes pair well with Sprite or Fanta. The peppermint flavor in the icing gets stronger overnight, so the cake tastes even better the next day.
