When my husband and I came up with the idea to make egg roll nachos, I thought we’d probably hit on a good combination. We soooo did! We enjoyed this super flavorful dish with a few glasses of beer and an at home date night. What I love about this meal, besides the great flavor, is that we put the whole thing together ourselves. Not just the food, but everything that went into serving it. For example, I made the “stupid dishes” towel on my embroidery machine. I was so happy when he used it! He grew those peppers in our garden. I bought him the cast iron skillet a while back because we didn’t have one and he had lots of plans that called for one. The pilsner glasses are part of a gift I gave him a few Christmases ago because we were learning about different beers, and we bought the bottle opener for ourselves a few anniversary’s ago. Finally, I love that he doesn’t mind using my polka dot oven mitts and those are plates that we use daily. So, this fun meal that we made together ended up representing our life together and casual style even more than I realized. Plus, it equaled a happy and relaxing night in.
This recipe is simple. You’ll need some delicious egg rolls. We’re using Van’s Kitchen chicken egg rolls. They’re so good. Besides the egg rolls we’re keeping it simple and just using jalapeno peppers and a Mexican blend cheese. Great cheese choices for this are a mix of cheddar, mozzarella, colby and Monterey jack. Keep the savory sweet and sour sauce packet! That goes on top when the nachos come out!
Add tortilla chips to a baking pan and top them with cheese. Next, slice the egg rolls to about a quarter of an inch.
Top the dish with peppers and you’re ready for the oven!
Egg Roll Nachos Recipe
Eggroll Nachos
Ingredients
- Tortilla Chips
- Van's Kitchen Egg Rolls
- Mexican blend cheese shredded
- Jalapeno peppers
Instructions
- Add tortilla chips to the bottom of a oven safe baking dish or cast iron skillet.
- Cover the tortilla chips with shredded cheese.
- Thinly slice egg rolls.
- Place sliced egg rolls on cheese topped tortilla chips.
- Top nacho dish with sliced jalapenos, to taste.
- Bake in oven at 375 until cheese is melted and egg rolls are browned. Approximately, 5 - 10 minutes, your oven may vary.
- Top with egg roll sauce.
- Enjoy!
We’re using a cast iron skillet so our finished nachos stay hot while we take our time eating. When the nachos come out of the oven, top them with the savory sweet and sour sauce packet. YUM!

Hi Mary Anne! They’re already precooked, so we just sliced them, put them on the nachos and then put the whole pan in the oven. 🙂
