This Cheesy Potato Soup Slow Cooker recipe is such a hit around our house. I love it because you can make it ahead of time and have it ready for whoever is hungry at a moment’s notice, but I think everyone really loves it because it’s delicious. One of the best things about it is that you can add toppings to it to really personalize it, so each person can have their own particular bowl. That’s pretty cool!
My husband and I went shopping for the ingredients at Publix the other day. It turned out that we pretty much had everything on hand at home, except potatoes and the Sargento® Shreds. Having Sargento Shreds shredded off blocks of real, natural cheese was a bonus since I didn’t need to do it myself. It was our youngest son’s birthday, he’s a freshman home from college for a few days, and we already had enough to do to prepare for the celebration. If there was any way I could make it easier on myself, I did.
This is so simple to prepare. It’s basically just peeling potatoes, chopping up potatoes and onions and cooking bacon.
Next, you pour your chopped ingredients into a slow cooker, add the broth, butter, garlic, salt and pepper and cook it on high for about 5 hours.
When the potatoes are tender you mash them or use an immersion blender until you get the consistency that you like. Some people like big pieces of potato, some don’t. That’s why this recipe is great, you can make it your way! I used an immersion blender and blended it more than I meant to, but you know what? Everyone loved it super blended!
Add two cups of shredded cheddar cheese, or more. I mean, it’s your soup! Add more if you want! Now, I thought I was happy with the consistency of the potatoes here, but I was alone in that. Everyone else wanted it more blended, so I blended it more. That’s why it looks different in the finished photo. Remember, blend or mash those potatoes to your favorite consistency…or to what everyone is begging for. LOL. You be the judge.
Offer as many toppings as you can dream up! I used green onions, bacon, sour cream (though I forgot to take a photo with it dolloped on top…that’s how I ate it), and Sargento Shreds sharp cheddar cheese. Grab this coupon when you head to Publix! $1 off 2 Sargento Shreds Coupon
This recipe makes plenty to share with family and friends. It was the perfect choice for a weekend of gatherings at our house!
