He was a freshman, home from college for a few days, and we already had enough to do to prepare for the celebration.  Then, like now, if there was any way I could make things easier on myself, I did. Perfect time to pull out this recipe because it’s easy, cozy, and endlessly flexible. The slow cooker does all the work, and everyone can top their bowl however they like. This is so simple to prepare.  It’s basically just peeling and chopping potatoes, dicing onions and cooking bacon.

Load the Slow Cooker

Add your chopped ingredients, pour in the broth, toss in the butter, garlic, salt, and pepper, then set it to high for about 5 hours.

Blend to Your Favorite Consistency

When the potatoes are tender you mash them or use an immersion blender until you get the consistency that you like.  Some people like big pieces of potato, some don’t.  That’s why this recipe is great, you can make it your way!  I used an immersion blender and blended it more than I meant to, but you know what?  Everyone loved it super blended!

Stir in the Cheese and Adjust the Texture

Add two cups of shredded cheddar cheese, or more.  I mean, it’s your soup!  Add more if you want!  Now, I thought I was happy with the consistency of the potatoes here, but I was alone in that.  Everyone else wanted it more blended, so I blended it more.  That’s why it looks different in the finished photo.  Remember, blend or mash those potatoes to your favorite consistency…or to what everyone is begging for.  LOL.  You be the judge.

Ingredients
  

  • 6 large Russet potatoes peeled and cut into 1-inch cubes
  • 1 large yellow onion chopped
  • 3 garlic cloves minced
  • 1 quart chicken broth
  • ¼ cup butter
  • 2 teaspoons pepper
  • 2 teaspoons salt
  • 1 teaspoon seasoned salt
  • 1 cup half and half cream
  • 2 cups shredded sharp cheddar cheese

Toppings

  • Green onions
  • Sour cream
  • Bacon
  • Additional shredded sharp cheddar cheese

Instructions
 

  • Combine the peeled and cubed potatoes, chopped onion, chicken broth, garlic, butter, salt, pepper, and seasoned salt in a large slow cooker.
  • Cover and cook on high for about 5 hours, or until the potatoes are tender.
  • Use an immersion blender or potato masher to blend the soup until it reaches your preferred consistency.
  • Stir in the half and half and shredded cheddar cheese until melted and creamy.
  • Spoon into bowls and add your favorite toppings such as green onions, bacon, sour cream, or extra cheese.
