Ingredients

large Russet potatoes
peeled, cut into 1" cubes
3
garlic cloves
minced

quart
chicken broth
2
cups
shredded sharp cheddar cheese
1
cup
half and half cream
1
large yellow onion
chopped
1/4
cup
butter
2
teaspoons
pepper
2
teaspoons
salt
1
teaspoon
seasoned salt
Toppings:
green onions
sour cream, bacon, shredded sharp cheddar cheese
Instructions
Combine the peeled, cut potatoes, chopped onion, chicken broth, garlic, butter, salts and pepper in a large crock pot.
Cook on high for 5 hours or until potatoes are tender.
Use an immersion blender or potato masher to blend the soup until it is thick or at your preferred consistency.
Add the half and half and the 2 cups of shredded cheddar cheese.
Stir until blended.
Top as desired. Green onions, sour cream, bacon and shredded sharp cheddar cheese are great toppings for this!
