Ingredients

lbs
meat for stew cut into 1 1/2” cubes

Tbs
oil
2
medium onions
chopped

clove
of garlic
minced
5
medium potatoes
cubed
4
cups
of beef broth
or water with 4 beef-bouillon cubes
1
lbs
of carrots
chopped (see knife skills video)
1
tsp
of pepper
3
bay leaves
1
Tbs
of dried thyme
3
Tbs
of Worcestershire sauce

Tbs
lemon juice
1
tsp
of salt
1
tsp
black pepper
1
lb
frozen peas
1/2
cup
of flour
cold water
to mix with flour to thicken
Instructions
In a large pot, add oil and coat the bottom of the pan.
Heat for 1 min, then add stew meat and brown.
Once the meat is browned, add carrots and cook (stirring constantly) for 2 – 3 min.
Add garlic and onions and cook for another 2 min being careful not to burn the garlic.
Add the beef broth (or water with dissolved beef-bouillon cubes), lemon juice (helps tenderize the meat), bay leaves and Worcestershire sauce.
Stir and let heat for 5 min.
Add potatoes, salt pepper and dried thyme, stir and bring to a hard boil.
Turn heat down to simmer (low) and cover.
Cook for 2 – 2 1/2 hours stirring occasionally.
Add frozen peas and bring back to a boil, turn heat back to simmer and cook for another 15 – 20 min.
To thicken, whisk cold water into the 1/2 cup of flour until it is about the consistency of heavy cream.
Bring the stew back to a boil and slowly add the flour mixture to the stew in 1/4 cup increments.
Stir constantly, adding flour mixture and checking consistency until desired thickness is achieved.
Turn heat back down to simmer for 5 more min, stir and enjoy.
