It’s Hard to Do Nothing, but I’m Willing to Give It a Shot…

I’m not good at doing nothing. My nothing days always have something going on. Usually I’m plotting and planning how to take over the world, wait, no, that’s Pinky and the Brain.

Pinky: “Gee Brain, what do you want to do tonight?”
The Brain: “The same thing we do every night, Pinky—Try to take over the world.”

You know a good workhorse that can make your day easier if you’re plotting to take over the world, or just trying to do “almost” nothing? The much under-appreciated crockpot. Yes, really. Even a mastermind like Pinky has to eat, but sometimes he just doesn’t want to make a big production out of it. He’s trying to take over the world for heavens sake!

Here’s a recipe that is sure to win you friends, influence people and give you the energy to take over the world. Ok, that was a stretch. Actually, it will just help you have dinner ready without going to tons of effort. It’s sort of a “do nothing” (ish) meal. I got this great little recipe from my favorite, easy-as-a-mouse-click, recipe site, RecipeZaar.

Crock Pot Chicken with Black Beans and Cream Cheese

4 hours | 3 min prep | SERVES 4
4-5 boneless chicken breasts
1 (15 1/2 ounce) can black beans
1 (15 ounce) can corn
1 (15 ounce) jar salsa, any kind
1 (8 ounce) package cream cheese

1. Take 4-5 frozen, yes, frozen, boneless chicken breasts put into crock pot.
2. add 1 can of black beans, drained, 1 jar of salsa, 1 can of corn drained.
3. Keep in crock pot on high for about 4-5 hours or until chicken is cooked.
4. Add 1 package of cream cheese (just throw it on top!) and let sit for about 1/2 hour.
5. All done and enjoy!

Must hit the “that was easy” button on that one, huh? In our house, we sometimes shred the chicken and serve it on tortillas. So, I think I’m going to go do “nothin'” and whip this baby up. Then I’m going to try to really do nothing. You know, like laundry, eBay, schedule car repairs, make dr. appts, pay bills, clean, take a shower, get out of this chair…
