Every year we celebrate the Big Game by watching it with our friends Rich and Jamie.  It’s been our tradition for so long that my youngest, who is now 16 and towers over me, was a toddler who would fall asleep before halftime.  So sweet!  As is our tradition we take turns throwing the party.  This year it is at our house, so I’m eager to add some new foods to the mix.  This year I came up with this Puff Pastry Stuffed Cheesy Buffalo Chicken Bites recipe and it rocks!  I know because I made these yesterday and had them ready for my sons when they got home from school.  They got rave reviews from my kids.  I mean that my teenage sons left what they were doing to come and tell me how good they were.  Mind blown.

Puff Pastry Cheesy Buffalo Chicken Bites Recipe

One thing that I love about this recipe is that it’s easy.  You’re finished in just a few steps.  The other thing I love is that you get two serving items from one.  I’m using Farm Rich Buffalo Chicken Bites and using the puff pastry on some of the Bites and simply serving the others as they are.  By the way, they’re delicious as they are…and easy.  You bake them, stir in the included sauce pack and you’re ready to serve them.

This recipe is easy and very forgiving.  For example, if you leave your puff pastry out so long that it starts to dry out, like I did, it will still work.  By the way, lay a damp paper towel over your puff pastry to keep it from drying out or to refresh it if it gets a little dry.

The first step is to cook the Buffalo Chicken Bite according to the directions on the box.  Second, thaw your puff pastry.  Third, cube or slice cheese to add to the chicken.

I used a pizza cutter to slice the puff pastry into 9 squares.  Add a cooked Buffalo Chicken bite and a few pieces of cheese to one of the squares.

Wrap the pastry around the Buffalo Chicken Bite and the cheese.  Place on a lined baking sheet.  (I also sprayed mine out of total paranoia that they would stick.)  Bake for 14 minutes.

Take them out of the oven after 14 minutes (or when they are golden brown) and serve!

Ingredients
  

  • Farm Rich Buffalo Chicken Bites
  • Puff Pastry
  • Cheddar Cheese

Instructions
 

  • Cook the Farm Rich Buffalo Chicken Bites according to the directions on the box.
  • Thaw the puff pastry.
  • Cube or slice cheddar cheese.
  • Slice the puff pastry into 9 squares.
  • Add a cooked Buffalo Chicken bite and a few pieces of cheese to one of the squares.
  • Wrap the pastry around the Buffalo Chicken Bite and the cheese.
  • Place puff pastry wrapped chicken and cheese on a lined baking sheet.
  • Bake for 14 minutes, or until golden brown and puffy.
  • Serve & enjoy!

You eat one first…because you’re the official tester, right?  That’s how it is in my kitchen.  Delicious!

I will definitely make these for the football game that’s coming up, but they’re also perfect for board game nights and tons of other occasions.

I bought everything I needed for this football party at Walmart.  Besides the Farm Rich Boneless BBQ Chicken Bites, I also got the BBQ ones, some Loaded Potato Skins and Breaded Mushrooms.  That variety will please everyone!  Actually, I bought all that PLUS gloves and a hat for my cross country runner.  I’m so glad I got my son to go into Walmart with me because then he remembered that he needed things for running that we could pick up there.  If not, you know that would have become an emergency some early morning or late night later this week.  Right?  I love getting all that stuff out of the way and taking care of as much as I can in one place.  Don’t you?  Whew.
