Did you know that September is “Better Breakfast Month”?  Me neither but it’s got my full support.  I love breakfast.  Seriously…LOVE IT.  I love it enough that I created two breakfast events that have become tradition in our family.  One is the day after Thanksgiving breakfast, which has all the attendees from Thanksgiving and nearly as many different breakfast dishes.  The other is our “Scrooge” morning.  That’s where my husband and I create a huge breakfast buffet and serve it on the dresser in our bedroom.  Our three kids pile into our room and we shut the doors and pretend we’re in a fancy hotel suite while we watch “A Christmas Carol”.  That is one of my very favorite family traditions.  I require anyone who has to leave to get anything from the kitchen to pick up the phone and “call room service” before they can leave.  Yep.  Me = Crazy.  Me also = Loves Breakfast.  It doesn’t have to be a special occasion to make me appreciate breakfast.  Mornings can be hectic, but that doesn’t mean you have to sacrifice on flavor or nutrition. Four words: Peanut Butter for Breakfast!  It’s not only nutritious but it’s very versatile—spread it on a bagel, stir it in a smoothie or top off your waffles for a quick and easy serving of protein.

I started working out back in January.  One thing I learned was that not all breakfast foods are created equal.  Meaning, if I don’t get some protein in the morning I can’t work out.  I can show up at the gym but I just don’t have the energy to do my best when lifting weights or getting in this squat machine. Peanut butter is a great addition to mornings because it is a natural, plant-based source of eight grams of protein and more than 30 essential nutrients and phytonutrients.  That gives me and my family the energy we need to accomplish our goals.

I made this yummy breakfast when I had some time the day before.  After I was finished making it, I put it in bowls and covered them with plastic wrap.  The next day I added just a touch of water and heated it in the microwave.  Ta da!  Breakfast is ready!  I used this recipe but substituted a super chunky peanut butter for smooth.  I liked the added texture the small peanuts gave the oatmeal.  Adding peanut butter to this recipe was a simple way of adding some extra protein to the dish.  Think of all the yummy ways that you can incorporated peanut butter into your breakfast!
