The smell of frying bacon wafting through our house is better than a dinner bell.  One by one, each person in the family will stop into the kitchen to see what’s cookin’.  Haven’t you had that happen?  It’s pretty funny.  I get it, though.  If I’m the one cooking, I’m already appreciating the bacon and excited about the recipe.  If I’m not the one cooking, I’m definitely headed to the kitchen to see when this meal is going to be ready.  Bacon is definitely one of the things that can help gather the family around the table…all at the same time!  Today I’m cooking a Crustless Bacon Quiche.  You’re going to love it because you can make it the day before for easy serving at breakfast or dinner.  I actually ended up serving this for dinner with a salad.  Hello, versatility!

I love how such simple ingredients can make something so flavorful and so easily!  I’ve been making this recipe for years as a classic quiche Lorraine but it occurred to me that some people might not know that a quiche Lorraine is really just bacon, eggs, cheese, onions, spices and milk/cream, cut, stirred and baked.  Bacon is the star of this recipe.  It deserves an updated name to reflect what it really is, don’t you think?  Thinking of it in a new way might get people who haven’t tried it before to try it…and they should because it’s delicious!  Plus, I got rid of the crust in case you don’t have one on hand and don’t want to try and make one, which I just don’t see myself doing.

I’m using HORMEL® Black Label Bacon.  This bacon cooked so evenly!  That made it easy to work with because I needed to chop it up next.

It was so crisp, it chopped up perfectly too.  You use 12 slices in this recipe, but I made 13.  Um…one for the cook, right?

Does your family cook together?  It’s never too early or late to start.  When my kids were little, this is just the kind of recipe where I would enlist their help.  They can break the bacon (I chopped it with a knife this time) and stir the ingredients.  I liked having them help because it gave me a chance to compliment their contribution, listen to their day, give them cooking tips and later share the meal we cooked.  It’s a great way to make memories and hear things you might otherwise miss.  My daughter is in college and my sons are in high school now but we still do things this way.  Plus, they can cook on their own too!

A delicious quiche made with simple ingredients. Based on the classic quiche Lorraine. Perfect for breakfast, lunch or dinner!

Ingredients
  

  • 12 slices of bacon cooked and chopped
  • 4 eggs
  • 2 cups of half and half
  • 1 cup Swiss cheese shredded
  • 1/3 cup onion diced
  • 3/4 teaspoon salt
  • 1/8 teaspoon cayenne pepper

Instructions
 

  • Heat oven to 450.
  • Whisk eggs in a large bowl.
  • Add remaining ingredients while stirring.
  • Generously grease a deep dish pie pan.
  • Pour mixed ingredients into the greased pie pan.
  • Bake for 15 minutes at 450.
  • Reduce oven temperature to 300.
  • Bake for 30 minutes at 300.
  • Quiche is done when a cake tester (or knife) comes out clean from the center.
  • Let the quiche stand for 10 minutes before serving.

I’m using a deep dish pie pan.  Now it’s ready to go in the oven!  While this was cooking my sons came home from their sports and my husband came home from work.  They were thrilled that we were having quiche.  YAY!  A meal everyone is excited about makes it easier to get them around the dinner table.  You can’t always cook with your family but it’s great when you can find the time to eat together. You learn so much about each other by simply sharing a meal.

If you make this Crustless Bacon Quiche the day before, you’ll have more time to sit down together for a quick and great breakfast.  Too rushed in the morning?  Serve this at lunch or dinner with a salad.
